You can make this delicious cake in many ways - some more healthy than others. Today we're giving you a recipe for a less caloric but still tasty version of a cheesecake. Enjoy a slice, guilt free!
For 1 baking dish (12 slices) you need:
- 750 g low fat cottage cheese
- 6 eggs
- 2 bananas
- 2 tablespoons of coconut sugar
- 1-2 tablespoons of flour
- baking powder
- 1 pomegranate
Separate the egg-whites from the yolks and beat the egg-whites. Place the egg yolks, cottage cheese, bananas, coconut sugar, flour and baking powder into a mixer and mix until smooth. Gently stir in the beaten egg-whites.
Place baking paper in the baking dish and place the mix on it. Bake for 40-45 minutes at 170°C (gas marks 3-4).
Once it cools down, place it into a fridge - best to leave it overnight. :)
Before serving, sprinkle pomegranate arils over it. Yum!
How to clean a pomegranate?
Cut the fruit in half but only cut through the peel, without damaging the arils inside. Use your fingers to separate both halves. Take a deep bowl and a big spoon. Turn the fruit upside down and hold the opened up part above the bowl. Hit the top fruit with a spoon, vigorously, so the arils fall out. While doing so, you can use your fingers to get even the most stubborn ones out.
